Carambola, also known as star fruit, cultivated mainly in tropical areas, is 5 to 15 centimetres long, oval-shaped, with a thin and smooth skin, yellow in a ripe stage. The fruit flesh is light yellow, incredibly juicy. Carambola taste can be compared to a mixture of apples, pears, grapes, and citrus fruits. Carambola is widely used in the cuisine of Southeast Asia, China, Australia.
Carambola has the peculiarity of possessing a considerable amount of oxalates. These substances can cause acute renal failure in people with previously normal renal function, as amounts of oxalate salts can be present in the star fruit between 80 and 730 mg/dL.
